The Corporate Chef Shahar hails from Israel, but it is in the United States of America that he developed his savoir-faire. In 1999, his career takes a start within the top international restaurants and makes him discover the world of contemporary new-styled Japanese cuisine. A few years later, his career led him to the most exclusive dining places in Monaco. ” I had never eaten sushi in my life ” he said once. We can now relate that this time is over. Chef Shahar, remaining true to the quintessence of the Japanese cuisine, will sublimate your culinary experience at THE NIWAKI, ultimate Japanese destination in Monte-Carlo.”

Where were you born and at what age did you start in the food and beverage industry? How were you first attracted to the food and beverage industry?
I was born in Israel and moved to New York City when I was around 30. I fell in love with a woman who was into food. It inspired me so I started watching food channels and cooking by myself before enrolling in the French culinary institute in Broadway, New York.

What are the most important aspects to running an efficient kitchen?
To have a good staff on which I can rely on. 

How has COVID affected the restaurant industry?
I believe COVID has strongly affected the restaurant industry in its quintessence which is to be immersed by an experience from the moment you walk in the restaurant, until the time you leave.  However, I reckon COVID crisis has developed another type of service which was not that common in the South of France until then: delivery and take away. Fortunately, after the crisis, when everything went back to normal, people started enjoying good food in beautiful restaurant settings again. 

What’s your next planned opening? 
We have several projects in mind, however we keep it secret for now (laughs)

Where is your favourite country for a food experience?
Japan and Italy are my favourite countries for food experience as their cuisine is very rich and offers a wide variety of dishes and techniques. 

Your favourite dish to cook at home?

I grew up in a Moroccan house, so my all-time favourite dish is couscous which is a traditional dish in Morroco. 

What advice would you give to a young person interested in a career in the kitchen?
"Love what you do, be precise and don’t turn right or left on the way to achieving your dream - go straight there. Even if it’s difficult, work for it, don’t complain and don’t cry because in the end you will make it".

Your favourite food and beverage pairing?

Hamburger and beer is a must! (laughs)

When you have goals in life, you then have something to reach everyday.

Blevins Franks Financial Tips - Why Time in the Markets Matters

When you have worked hard to build up your savings, it is not always easy to decide how best to look after them, especially if you are nearing retirement or already enjoying your retirement years. You most likely have some or all of the following objectives: 

·      Protect your capital and maintain financial security  

·      Generate an income  

·      Grow the capital, but with an acceptable level of risk 

·      Leave a healthy inheritance to children and grandchildren

You know that you need to invest to earn enough capital growth but may also be wary about taking on too much investment risk.  And if you are invested geopolitical events and market volatility can make you nervous and wonder if you should sell and sit in cash for a while.

In truth, for most people, successful investing is hard; financial markets are complicated and can be unpredictable. But by getting a better understanding of investment principles you can avoid some common pitfalls. Following these principles and working with a financial adviser will help turn your goals into reality.

 

The risks of trying to time the market

Successful investors are marathon runners, not sprinters. So staying invested in the markets over the long term usually gives the best returns. When you see the markets fluctuate, it can be tempting to buy and sell investments, either to chase short-term gains or because you are afraid share prices will fall.  Unfortunately, this can often result in entering or exiting the market at precisely the wrong time and making emotional investment decisions will rarely help you meet your longer-term financial goals.

For individual investors, it is extremely difficult to anticipate and deal with the wide range and speed of events and issues which can impact economies and markets. At any time, external events, investor sentiment and even rumours can have a negative or positive impact, often unexpectedly and suddenly. Reacting to current conditions is usually too late, so to be successful, you would need to foresee both the best time to buy and to sell. Even experienced investors cannot get this right all the time. 

Then there is the risk of missing out. It is surprising what a difference certain days in a market cycle can make to returns. If, for example, you are not invested because you are waiting for share prices to stabilise after a period of volatility, you could miss benefiting from rebound days if the market suddenly rallies.  

To illustrate this, if you had invested £100,000 in the FTSE All-Share index for the full ten-year period up to 31 December 2021, and stayed invested the whole time, you would have enjoyed a profit (before fees and charges), of £110,700, so  your investment would notionally have more than doubled to £210,700, including the original investment. Investors who missed the five, ten and twenty best days saw profits, before fees and charges are applied, drop to £64,090, £40,540 and £6,820 respectively. Those who missed the best 30 days saw a loss of £15,800.

While it may feel uncomfortable to stay invested when markets fluctuate, this discipline usually produces better returns over the longer term than chasing short-term gains.

 

The importance of diversification

Before investing, you need to ensure that your strategy is well diversified and suitable for your situation, risk appetite and goals. Even the most patient investor is unlikely to benefit from an ill-fitting portfolio that does not meet their needs or is overly concentrated in one area. 

The best strategy for minimising risk is to diversify by spreading investments across multiple, unrelated areas. This should include a range of different asset classes (shares, bonds, cash and ‘real’ assets such as property) as well as geographical regions and market sectors. Diversification gives your portfolio the chance to produce positive returns over time without being vulnerable to any single area or stock under-performing. 

Choosing an adviser who uses a dynamic ‘multi-manager’ approach can help increase diversification. By combining several carefully selected fund managers, this reduces reliance on any one manager making the right decisions in all market conditions. 

 

Establishing a suitable investment approach

When investing, it is crucial to carefully assess your situation, income requirements, goals and timeline alongside your appetite for risk. This is best done objectively by an experienced professional who can then build a diversified portfolio with the right balance of risk/return for your peace of mind. Your arrangements should also be structured as tax-efficiently as possible for your country of residence. 

If you have capital to invest but today’s climate makes you nervous, you could consider spreading the timing of your investments over a period by investing in tranches. The ‘pound (or euro/dollar) cost averaging’ approach can help smooth out volatility and potentially improve average returns over longer time periods. 

British expatriates may also benefit from exploring investment structures that have a multi-currency facility to minimise exchange rate risk. This would allow you to invest, for example, in sterling now and then switch to euros as you wished, and choose the currency of withdrawals. 

Ultimately, a long-term, diversified investment approach is vital to help protect and grow your capital, whatever the economic climate. While a ‘keep calm and stay invested’ approach usually gives the best overall results over time, make sure you still review your planning once a year, or sooner if your circumstances change, to realign your investments with your risk profile and continue meeting your long-term financial goals.

The Monaco Streaming Film Festival Showcases its Second Year of Events from Tuesday 31st May to Friday 3rd June

The Festival is the world’s only event dedicated to film, sports and series content streaming. The Festival is partnering with some of the biggest names in streaming as well as the new up-coming platforms, making their names for original streamed content. The streaming industry is new and is growing rapidly. The covid lockdown accelerated audience numbers and now most consumers have access to a range of streaming platforms, including: Netflix; Amazon; Disney+, Hulu and Samsung+ with an array of original content hosting exciting and dynamic shows and film and in many global languages. Recent huge successes in streamed content include Peaky Blinders, Stranger Things, The Tinder Swindler, Red Notice and many more great titles.   

The Festival will be held again at The Grimaldi Forum in Monaco and will feature a range of events for local residents to enjoy, many for free!

The Film Premieres

The Monaco Streaming Film Festival will premiere three original film and TV series’ live in Monaco and we invite local residents to come and enjoy the excitement of a film premiere, from the cocktail launch events, along with the stars and film industry celebrities through the the Q&A with directors and producers of the premiered film. All followed by the after-premiere parties.

When and where was the first time you saw and interacted with a Borneo Pygmy elephant? What effect did it have on you?

I first heard about Bornean Pygmy Elephants about 20 years ago when I was working with elephants in Africa.  They came up in a simple conversation and it was at that time that I became intrigued to learn more about them.  I began watching David Attenborough documentaries and began my own research on the most biodiverse island in the world in which they live, Borneo.

Over the years I noticed that this species of elephant was continuing to decline in numbers due to habitat loss and human-elephant conflict.  Currently, there are less than 1000 surviving in the rainforests.  It wasn’t until 2014 that I had the opportunity to travel to the island of Borneo and observe them in their natural habitat. 

The first time I saw these small elephants they were feeding on grass along the Kinabatangan River, I felt so fortunate to see so many of them as oftentimes you can look for days and not find any. That first day was also very profound as I witnessed human-elephant conflict and realized what these elephants endure daily. I felt so much compassion for them that I knew this was where my future work would be focused.  Hence I started a 501(c)(3) public charity in the United States and shortly after France.

Could you describe in a few sentences what is your daily routine with the Borneo Wildlife preservation and the effort that it requires?

These days there are many non-profit charity organizations and obtaining grants and donations has become increasingly difficult.  We focus a lot of effort on social media fundraising but also, I feel it important to maintain a good working relationship with positive daily communication with my team and conservation partners in Borneo. I am also a part of an international elephant network where we share sustainable solutions for conservation, protection, husbandry training, and environmental issues.  Currently, there are 22 elephants in human care in Borneo and Borneo Wildlife Preservation works to ensure all these elephants’ basic needs are met.

As we work in Borneo twice a year, I coordinate with other professionals to bring inspiring presentations, demonstrations, education, and elephant care to the locals.  We work directly with the local students and elephant handlers.  

Do you take care of elephants all around the world or only in the Asian continent?  

We only focus our efforts to take care of these elephants which are exclusive to the island of Borneo.  They are an Asian elephant subspecies also known as Pygmy elephants as they are the smallest elephants in the world.  Their small size suggests that they have adapted to their environment, the rainforests of the Malaysian side of Borneo. 

How important is it for the general population to see elephants and be encouraged to care for them?  

As an environmental and animal advocate, I feel it is very important that people learn about not only Bornean elephants but elephants worldwide.  Seeing them in person can be inspiring and motivating for people who want to get involved and protect them for future generations to appreciate.  Witnessing firsthand the beauty of these animals interacting, people will naturally want to protect them. 

Our planet is becoming more and more populated and natural resources for the survival of elephant species are becoming more limited. Positive human intervention will create a new future and better outcome for the survival of these majestic ancient animals.  

What first inspired you to focus your research on elephants?  

With an established professional career working with Exotic and Domestic animals over the last 20 years I knew quite a lot about elephants from school. Their high intelligence and strong family bonds were always intriguing to me.  I think that when I founded Borneo Wildlife Preservation, it was the right time to give back and aid this species to the best of my ability.  

What surprises you the most about what you are doing now?

The increasing interest BWP is receiving from our events in Monte Carlo is very exciting.  Each year after presentations or fundraising events we receive emails and phone calls from interested persons wanting to know more about the island of Borneo and what they can do to help aid the elephants and which I am grateful for. 

Do you have any recommendations for people who want to help elephants in need?

I would urge people to donate to wildlife organizations like BWP and to get involved by just talking about these issues to others.  I recommend people read product labels and only purchase products that are sustainable to the environments where elephants live.  Many rainforests are destroyed by logging and the expansion of oil palm plantations.  One example is to only purchase sustainable palm oil products if any at all, where you see an RSPO  (Roundtable of Sustainable Palm Oil) logo.

Are you planning to invest in new immersive technologies like virtual reality to further reach out to your audience?  

We believe at BWP that the metaverse immersive experience is a good way to distribute knowledge, education, and experience.  So yes, we will somehow sponsor camera initiatives to get more wildlife content.

The Macsween Burns Supper Guide - Learn All About Scotland's Most Loved Haggis

Burns Night - celebrating the life and work of Scotland's national poet “The Life of Robert Burns”, Scotland's national poet, is celebrated every year on 25th January. Burns was a noted raconteur and wordsmith of the highest order.

The first Burns Supper was organised by his friends after his death in 1796 and is a tradition that continues to this day. Be it a smart, formal affair or relaxed family gathering, the star of any Burns Supper is the haggis.

What Is Haggis and What’s In It?


Scotland's national dish provokes huge curiosity.
Simply lamb, beef, oats, onions and spices, nothing more, nothing less. Haggis is basically like an oaty, spicy mince and a great source of iron, fibre and carbohydrate with no artificial colours, flavourings or preservatives. Each haggis maker will have a slightly different recipe, but this is the way our Grandfather made it and we think it’s the best tasting recipe there is! Our vegetarian haggis is a combination of healthy fresh vegetables, mushrooms, pulses, oats, onions and seeds. It is approved by the vegetarian society and is suitable for vegans, but is loved by meat-eaters too.

What Are Its Origins?

The biggest myth of all, in a way, is that haggis belongs to Scotland alone. Haggis is actually a very ancient, global dish. Going back thousands of years, when hunters returned with their kill they would cook-up the parts of the animal that needed eaten first. The fresh offal would be chopped and mixed with cereal and herbs and cooked over the fire in the ready-made saucepan (the stomach). Hey presto – the first haggis. Many cultures actually had haggis made from different animals depending on what was being hunted and we like to think of haggis as the celebratory dish that everyone shared after the big hunt!

A Haggis Recipe
Whilst 25th January is an important date, don’t forget that haggis can be eaten on any day of the year.

Gluten Free Haggis Larb Lettuce Cups
250g MacSween Gluten Free Haggis
200g pork mince
2 tsp vegetable oil
2 stalks lemongrass, finely chopped
1 large red chilli, finely chopped
2 cloves garlic, crushed
1 banana shallot, finely chopped
2 tsp palm sugar or brown sugar
2 tbsp fish sauce
1 lime, juiced
small bunch fresh coriander, chopped
1/2 cucumber, seeded and sliced
2 spring onions, sliced
2 baby gem lettuce
handful of peanuts

Method
Heat the oil in a large frying pan or wok over a medium heat and fry the lemongrass, chilli, shallots and garlic for 2 minutes. Add the haggis and pork mince, continue to cook for another 6-8 minutes, stirring all the time. Keep cooking until the mince is fairly dry.
Add sugar and fish sauce and let the mixture bubble for a minute then stir in the lime juice and most of the coriander.
Divide the between the lettuce leaves and garnish with cucumber, spring onion, coriander, peanuts, chilli slices and a final squeeze of lime.

The past 18 months have been truly extraordinary. The global pandemic has disrupted our lives to an extent which is unprecedented in recent history. Notions such as curfews had last been used during WWII and had all but disappeared from our vocab- ulary. Moreover, civil liberties that we had taken for granted, such as the right to assemble, were se- verely curtailed at the height of the lockdown. Dai- ly activities like going to the office, taking a plane, going on holiday or eating in a restaurant, all be- came much more difficult if not impossible.

The pandemic will most certainly cause some pro- found changes to several aspects of our lives. For instance, the way we work is likely to be different, with more flexible employment models that com- bine both a physical and virtual presence becom- ing mainstream. We might also trade more busi- ness trips for video conferences, etc.

There is another paradigm which the pandemic has affected: global supply chains. Covid has shown how fragile these supply chains can be. For dec- ades, the key trend for companies was to produce goods in low-cost countries, i.e. emerging markets. This meant that parts or finished products had to be shipped across the globe in order to reach their customers. Ever since the pace of the vaccination campaigns accelerated in developed markets with life returning to normal, many manufacturers have faced supply shortages that have exposed the fra- gility of global production chains. Voices speaking out in favour of more localised and regional supply chains so that production can take place closer to the end-consumer are getting louder. In addition, increased scrutiny of the carbon footprint of the goods produced no longer only includes the CO2 emissions from their production, but also their transport. Shipping cheap goods halfway across the globe will no longer be socially acceptable.

In the meantime, significant progress has been made in the manufacturing industry with the help

of new automation processes, robotics and 3D printing, thus significantly reducing the costs of production in locations with higher labour costs. We are convinced this trend will intensify as com- panies and governments are pursuing greater re- gionalisation with increased control over their sup- ply chains. This will provide a boost for investments in manufacturing technologies and the creation of regional champions (page 14).

From a more macro-economic standpoint, govern- ments and central banks have provided extraordi- nary support to the economy and financial markets during the pandemic. This took the form of large government stimulus programmes as well as very accommodative monetary policies as central banks provided abundant liquidity and maintained record low interest rates.

Now that many economies are on the road to re- covery, governments and central banks will need to bring their stimulus measures to an end. This should lead to more volatile financial market condi- tions and slower growth as economies start to nor- malise after experiencing a strong post-pandemic rebound. Investors will need to be more discerning to find sources of yield. Our Megatrends aim to identify these investment opportunities in secular growth themes (page 20).

In this context, selecting equities that provide a good balance between risk and return has become even more crucial for portfolios. Our “5 CE” invest- ment methodology based on the “5 Criteria of Ex- cellence” allows for such a selection. See the main components and the process of this methodology on page 8.

Vivanova People - An Interview with the Creator of Villa Monaco and Serial Entrepreneur Jessica Stockmann and Daughter Nisha Stockmann

Both Jessica and Nisha Stockmann are incredible women, bound by blood and the strong belief in working hard to achieve greatness. Our Platinum Partner Villa Monaco is the Principality’s neighbour and the brainchild of Jessica Stockmann, a rare property of 4,000 sqm overlooking the Mediterranean Sea. Club Vivanova interviews both Jessica and Nisha to find out more about the passion and drive behind their success.

Jessica Stockmann - could you describe why and how you created and developed Villa Monaco.
Originally I built the Villa for myself meaning my children and my parents and my friends. I wanted to create a holiday hideaway where 3 generations get together, feel at home and spend quality time together. We celebrated many parties and had so many friends staying with us. Constantly a full house but with good vibes only. More and more often I was asked if I could rent Villa Monaco for special occasions or to my celebrity friends who wanted to hide from the paparazzi and just feel good energy and the vibes at our home and that was the beginning of Villa Monaco as 5* luxury hideaway.

Tell us something about you and the motivation behind your successful career.
When I am motivated to create something special, nothing can stop me. I am full of ideas and enjoy the creative ride and am blessed that I am not scared to take risks. If you believe in something then it doesn’t feel risky it only feels right. And if the willpower is big enough then a week of 72 hours of work does not feel wrong. On the contrary, it makes you feel better and you gloom like a flower who suddenly got more sun and more fertilizer than ever before.

What would you suggest to a young woman planning an international career, some tips and advice.
Think outside of the box. Listen to your heart and your soul. Keep your eyes open and use every chance you can get to learn and make experiences. Something you would like to create for your own is not only for you. Also, other people will appreciate it one day and want to have it too but they were maybe not as brave as you are. Being international does not only mean speaking many languages, it also means keeping your eyes and ears open and understand different cultures and traditions and the needs or dreams and wishes people have. Whenever you create something that people need or want then you are on the right track.

What were the challenges you had to face while developing as a female entrepreneur?
Being a woman in a man's world like the real estate business was not easy in the beginning but I also think that it’s easier for a woman to sell dreams than for a man. If you are authentic as a woman and don’t try to behave and act or sell a project as a man would do, you will find your clients easily if you don’t try to pretend to be someone else. Fortunately, in the luxury segment, I believe it’s a plus to be a woman. Women were always known to fall in love with very special jewels. Looking back the past centuries the history taught us that the most extraordinary diamond jewels were made for women and not for men. A luxury real estate is a jewel and who could create and sell it better than a woman?

What goals do you have for the future?
I want to learn from the new generation. I have experience and in some ways „know-how“ but the new technology opens so many doors. I am not afraid of those doors, they fascinate me. I always ask my children what is important for them and I realize they have different interests than I had when I was in my twenties. But I love the way they think and I would never say „leave me alone with your ideas“. The values are still the same, they don’t change, but our life has changed due to the internet, global warming etc. It’s constantly a challenge to stay happy and we can only do so if we listen to the very young and the very old population. In the end, we all live together on this planet. We only need to find a way that we can all live together happily. I believe in traditional ways but I also believe that the future has so much to offer for all of us.

Creating a home, a castle, a real hideaway which you never want to leave - that’s real luxury and that’s our goal. I don't measure myself against others, I just want to outdo myself and keep getting better with each property I create.

Nisha Stockmann - briefly tell us about yourself and your career.
When I was six I started to get on my mum's nerves because I always wanted her to take me to her construction sites. Seeing the process of creating a castle made me feel like a princess walking into a wonderland. When I got older I realized that it’s always a team effort. I loved watching people working hand in hand. And new ideas were created. I once said to my mum: „imagine a TV would be hidden like a treasure and no parent would know that there is a TV in the kid's room“. And you know what my mum did? She built a hidden TV in the ceiling that comes out of the ceiling with an electric remote. It looked like a James Bond movie. And that was the moment where I realized: Everything is possible. You only need to know your desires and dreams and then you can make them happen and that’s what made me decide at a very young age that I wanted to become an architect and designer.

How are you inspired by your mother?
My mum never tried to convince me to go into real estate but she constantly told me to open my eyes and be aware of how to spend my time. She said if you enjoy playing the piano for 10 hours a day then go for it and become a professional piano player. The most important thing is to find something you enjoy-a real passion. Luckily I developed a similar passion as my mum. Being creative but as a new generation. In my generation, we think more about sustainability and what is necessary. It’s not only a trend to look at in the future. It fascinates me what is possible when it comes to sustainable building and at the same time focusing on new designs and technology.

What are your aspirations for the future?
I want to create something that is still usable and modern and up to date even 50 years from now. I know it’s a very high goal but as I learned „nothing is impossible if you believe in it“.

Columbus Yachts, a brand of Palumbo Superyachts, presents the new 50-meter Sport M/Y K2. Columbus Sport 50 has naval engineering developed by both Palumbo Superyachts in collaboration with the Hydro Tec studio, while the exterior and interior design is penned by Luca Dini Design & Architecture.

For the exterior style, Enrico Gobbi revisited some recognisable characteristics of ISA superyachts, such as the pronounced arches connecting the hull to the superstructure and the strikingly elaborate air intakes reminiscent of a sports car.
